MEDINA, Ohio – Medina Brewing Co. and Big Dog Daddy’s are teaming to bring beer and barbecue to the brewery in the Medina Farmers Exchange building.
Construction is under way with target date for the restaurant to be up and running in late May-early June, said the brewery’s Mathias Hauck and Kirk Davenport of Big Dog Daddy’s, which will be on the ground floor of 320 S. Court St.
Hauck said the arrangement dovetailed perfectly for them.
“It’s one of those things that it just happens,” he said. “We see a need, work on it for a while. Medina (Brewing Co.) has been superbly busy. That little brewery has been coming to life.”
The only challenge, he said, was not having a regular food option.
Hauck said he was “95% set to open a pizza restaurant.” But he and Davenport have gotten to know each other, and a barbecue-centric eatery seemed like a good fit.
“What was best for both of us was to partner together,” he said.
That partnership will result in a restaurant using a little more than 1,000 square feet of space. The brewery-brewpub has a 200-plus seating capacity, Hauck said.
The building covers 40,000 square feet over several floors. It includes private apartments, the Farmer’s Table restaurant, Keller Meats. a coffee shop and a small retail marketplace. The five-barrel brewhouse includes 4,000 square feet plus an 80-foot by 20-foot patio.
“It’s a cool, vibrant space,” Hauck said. “It’s a gem of a space.”
Davenport, he said, is an award-winning pitmaster who knows his way around a smoker.
“We’re beyond excited,” he said.
“The number-one seller is brisket tacos. We’ll keep that as our core,” said Davenport, who will maintain his food trailer.
His trailer operates during spring, summer and fall, and he also owns his own brand of hot dogs, which he sources from Archibold, a town about halfway between the Indiana border and Toledo. Davenport started off years ago, he said, on a hot-dog cart – “that’s kind of been a staple.”
But it’s creativity in the kitchen with all things barbecue that will shine in Medina Brewing Co.
“I like to take barbecue and make little creations out of them and not necessarily go straight Texas-style or something you would get down South,” he said.
Expect flatbread pizzas and pulled-pork and brisket sandwiches to round out the core. And Keller Meats will be working with him on bratwurst patties for brat burgers.
Davenport is gravitating to bratwurst in part because of his German-American mother’s heritage. So think of sauerkraut with bacon, apple and seasonings. He calls it a brim burger “with good, melty Gruyere cheese and toasted bun.” And he won’t leave out a traditional American burger.
“Everyone loves a great burger,” he said, “but we’re going to do it with a brat patty.”
He added: “There are a lot of restaurants that produce really great barbecue. I just want to put something different out there. That’s why we’re going with bratwurst as a base.”
Hauck, who recognized the need for a permanent kitchen with quality food in his brewery, has been busy in recent years. His flagship is Avon Brewing Co. He expanded to ZZ’s Big Top in Avon and then Medina Brewing Co. He provides beer for Hop Brothers Brewing Co. in North Ridgeville. Hauck also is a catalyst behind the Medina Brewery Passport program, which will launch its second iteration on Friday, April 1.
“Medina is starting to be a little beer mecca,” he said. “It’s exciting.”
