Lou & Lucy: Bring on the comfort food - GazetteNET

Comfort food is a high priority for me, and I’m sure for everyone else right now.

I think it is important to have at least one good, nutritious meal a day, but ingredients are certainly a challenge. Especially if you are on a quarantine, or simply don’t want to expose yourself by going to the store for whatever reason.

I just got off of my 14-day quarantine after traveling. It was not too big a deal for me. I didn’t go too crazy. I managed to get food delivered from Coopers and State Street Fruit Store to get us by for the two weeks. Not being able to pick out my own stuff was frustrating, but I was very grateful to them for coming through for me in just a day or two.

I thought Instacart or Peapod delivery would be the answer. They apparently are very backed up and unable to give delivery times. Sometimes early in the morning there are times available. But if you try it, be ready. Have your payment info worked out and your list complete or it’s bye-bye for another week.

Back to the all-important comfort food. Comfort food doesn’t have to be fattening, by the way. I know that most everyone has a personal favorite comfort food, from roast chicken to a bowl of oatmeal to mac and cheese.

Every meal you cook can turn into a new favorite comfort food. The somewhat meager, easy meal I cooked last night might be a new favorite comfort food of mine.

A sheet pan dinner consisting of cut-up cauliflower tossed in olive oil, salt and pepper and thinly sliced garlic, with roughly cut hot Italian sausage. Then toward the end of cooking I sprinkled on about a half-cup of  browned panko breadcrumbs and some capers. Total cooking time was about 40 minutes at 400 degrees, until every thing looks brown and toasty and the sausage is cooked through. The panko and capers were added with 10 or 15 minutes left to bake.

Simple and satisfying comfort. Something needed in these crazy times, also add Netflix.

Comfort food these days consists of fresh apples and oranges. With my once-daily trips to the grocery store now a thing of the past, we are eating way too healthy.

I have been eating less, walking the dog more and even doing some dumbbell work every other day. I’ve lost nine pounds since March 11. Yikes!

I guess I am a finely tuned athlete, just like in the good old days.

BTW, We just finished watching the third season of “Ozark” on Netflix. Funny stuff. At least I think it is supposed to be funny.

What’s wrong with me?
